Keto Cranberry Fluff
1/2 a recipe of chilled cranberry chutney (recipe below)
2 cups heavy whipping cream
2-3 tablespoons sweetener of choice
1 teaspoon coconut extract
3/4 cups pecan pieces
1 cup large shredded unsweetened coconut
In large bowl whip cream until soft peaks form, add sweetener and coconut extract,continue mixing until firm peak stage. Mix cranberry chutney, pecans, and coconut gently until thoroughly mixed. Let chill to incorporate flavors.
Keto Cranberry Chutney
1 cup water
1 12 ounce package of fresh cranberries
2 tablespoons apple cider vinegar
1/4 cup sweetener of choice
1 tablespoon orange zest
1-2 tablespoons unflavored gelatin
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
Place water, cranberries, and sweetener in sauce pot over medium heat, bring to a light boil the let simmer for about ten minutes to soften berries. Lightly crush berries and add remaining ingredients stir to combine well then remove from heat. Pour chutney in bowl and cover with plastic wrap laying directly on chutney. Chill in refrigerator until ready to use.
I made this for Thanksgiving, it was delicious!!
