Absolutely the best fat bomb ever!
Blackberry Lemon Fluff Fat Bombs
8 oz recipe Blackberry Jelly
1 cup (237 ml) heavy cream, chilled
2-3 tablespoonfuls of Pyure sweetener
2 packets True Lemon
1 teaspoon lemon zest
food coloring, optional (I used a little)
1 tsp unflavored gelatin
2 tbsp (30 ml) water
Use very cold heavy cream for best results. Place cream and sweetener into a mixing bowl and whisk on medium speed until soft peaks form.
Turn mixer off and prepare the gelatin. Combine gelatin with water, stir, then heat until the gelatin is completely dissolved (microwave for about 30 seconds). Do not let the gelatin cool, simply pour it into the whipped cream.
Whisk the cream and dissolved gelatin on high speed until stiff peaks form, about 2 to 3 minutes. Add True Lemon packets and/or color last, then whisk for an additional 30 seconds. If time allows, chill whipped cream for 30 minutes.
Spray silicon mold with nonstick spray. Place eight ounces of Blackberry Jelly in microwave for 30 seconds. Pour into mold about two thirds full, place in refrigerator until set. Using piping bag or spoon, fill mold with lemon cream, use back side of flat knife to slide across molds and level off. Place in freezer until frozen. Pop out of molds and let partially thaw, enjoy frozen threats!!!
