Keto Cinnless Buns

Get your apron on, you’re going to fall in love with these Keto Cinnless Buns!


  • 1¼ cups super fine almond flour

  • 5 tablespoons psyllium husks

  • 1 tablespoon nutritional yeast

  • 1 teaspoon active instant yeast

  • 1/2 teaspoon sea salt

  • 1/4 cup Pure sweetener

  • 2 tablespoons cinnamon

  • 2 teaspoons cider vinegar

  • 1 cup near boiling water

  • 3 egg whites


  1. Preheat the oven to 350°F (175°C). Mix the dry ingredients minus the sweetener in a large bowl.

  2. I use hot water from my single cup coffee maker. Add the sweetener to the hot water and mix until dissolved, add water to the dry ingredients and mix well to allow the psyllium husks to fully absorb the liquid. Once absorbed add egg whites and vinegar and continue mixing until dough feels like play dough.

  3. Moisten hands and form dough into 1 1/2 inch balls and place on baking sheet.

  4. Bake on middle rack in oven for 50–60 minutes, depending on the size of your bread. They’re done when you hear a hollow sound when tapping the bottom of the bun. Cool on wire rack.

  5. Dust with powdered erythritol and cinnamon mixture.
