Creamed Broccoli Cheddar Soup

I love soup and this Creamed Cheddar Broccoli Soup doesn’t disappoint!!

Creamed Broccoli Cheddar Soup

2 1/2 tablespoons butter

1/2 cup diced onion

2 cloves garlic

32 oz chicken broth

1 1/2 cup heavy cream

10 ounces shredded sharp cheddar cheese ( more if you like it extra cheesy)

16 oz bag of steamable broccoli florets

1 teaspoon xanthum gum

Salt and pepper to taste

Instructions

Cook broccoli in microwave as per bag directions.

In large pot over medium heat, melt butter add onion and garlic, salt onion and sauté until onions are soft and translucent. Place cooked broccoli on cutting board and chop very fine, add to broth, bring to just below simmer ( you can use a immersion blender to make it creamed) and add cream. Stirring constantly add cheese a little at a time and let melt until all cheese is incorporated. To thicken add xanthum gum and stir for about a minute. Add salt and pepper to taste. Serve with a little shredded cheese and enjoy!!

  1. I made this today and used some additional items which were either in the freezer or dabs from the fridge. I added dark meat turkey, celery, cauli-rice, I added curry powder, cayenne pepper, red pepper flakes, and mustard powder. I love the flexibility of these recipes, Nancy. Use up what you got. A friend and I make whole recipes and give each other half. Makes for more variety for single people instead of eating the same thing too many days in a row.

    1. Soups are great aren’t they? Having a friend to cook and share recipes with is priceless!!
