Creamy Cheddar Broccoli Soup

A warm hearty soup to keep you full all afternoon.

Ingredients 

2 1/2 tablespoons butter

1/2 cup diced onion

2 cloves garlic

32 oz chicken broth

1 1/2 cup heavy cream

10 ounces shredded sharp cheddar cheese ( more if you like it extra cheesy)

16 oz bag of steamable broccoli florets

1 teaspoon xanthum gum

Salt and pepper to taste

Instructions

Cook broccoli in microwave as per bag directions.

In large pot over medium heat, melt butter add onion and garlic, salt onion and sauté until onions are soft and translucent. Add broth. Place cooked broccoli on cutting board and chop very fine, add to broth, bring to just below simmer ( you can use a immersion blender to make it creamed) and add cream. Stirring constantly add cheese a little at a time and let melt until all cheese is incorporated. To thicken add xanthum gum and stir for about a minute. Add salt and pepper to taste. Serve with a little shredded cheese and enjoy!!

  1. I have a picky autistic son, but if I grate onion it disappears. Changed to Riced Cauliflower for him, and this worked well. We crumbled some parmesan WHISPS to use as ‘croutons’. I added fine chopped chives & dried parsley to a bit of green. I think adding in cooked crumbled bacon or cooked chicken would make a main dish meal. Will try next time.

    I’ve been using MIRACLE DOUGH recipe and just completed a Lasagna. I found pre-baking the Miracle Dough Lasagna Pasta sheets will have to be done to prevent the dough from almost disappearing into filling. Son slurped up my first try with rave reviews.
    More MIRACLE DOUGH recipes coming? Or re-doing old recipes to include Lupin/Miracle Flour?
