Simple and simply awesome!
1 1/2 cups heavy cream
1 tablespoon butter
1/2 teaspoon xanthan or guar gum ( if needed)
salt & pepper to taste
Heat cream in skillet until soft simmer add salt and pepper. Reduce cream by half and thickens. Stir in butter and continue to whisk, if extra thickness is desired sprinkle xanthan or guar gum over mixture and cook an additional minute. Makes about two servings.
