Greens are an amazing thing!!
I’ve always loved my leafy greens. I guess you could say they are one of my ride or dies, when I don’t get my green veggies on the regular, uh hem, I’m not as regular!
This recipe is very flexible. Choose your favorite greens: collard, turnip, mustard, kale, Swiss chard and you’ve got a super healthy delicious meal!
1-2 pounds greens
3-4 tablespoons bacon fat
1/2 cup onion diced
2 cups cooked ham, kielbasa, or meat of choice
2 cups broth of choice
1-2 tablespoons vinegar
salt & pepper to taste
In Instant Pot press sauté button. Add bacon fat and sauté onion until softened, add greens in batches and allow them to wilt. Once all the greens are in the pot add meat, broth, and vinegar. Season to taste. Turn Instant Pot off and press Manual button, set for 15 minutes, when timer goes off either use quick release or allow to cool off naturally. Serve as a side dish or as a main dish. Top with more bacon fat and vinegar if desired.
