Sour Cream Chicken Enchilada Soup

A dish that will warm your heart as well as your stomach on cool Autumn days. Garlic Cheddar Biscuits make a perfect accompaniment with this dish.

Ingredients

3 cups shredded chicken

1 family size container loaded cauliflower mash (I buy Green Giant Bacon Cheddar)

32 ounces chicken broth

1/2 cup diced onion

2 tablespoons oil

4 ounces cream cheese

1/2 cup sour cream

1/2 cup diced green chiles

2 tablespoons finely chopped cilantro

salt and pepper to taste

Directions

Cook frozen cauliflower mash in microwave for nine minutes and set aside.

Over medium heat large heavy pot, add oil and sauté onion until soft. Add one and a half cups of chicken broth and bring to simmer, add cream cheese and stir until melted. Add chicken, cauliflower mash, remaining chicken broth, stir until combined. Simmer and add green chiles and cilantro. Season with salt and pepper to taste. Remove from heat and serve.

Top with shredded cheese, bacon, green onion or other favorite topping.

Makes about 6-8 servings.
