Green Chile Pork Tenderloin Tacos

1-1-/2 pounds pork tenderloin diced into bite size pieces 
1/2 cup onion diced small 
2-3 tablespoons avocado oil or other natural fat 
1/4 cup diced green chiles
1/2 cup Hatch Green enchilada sauce 
1 tablespoon taco seasoning 
Salt and pepper to taste 
Over medium high heat saute pork and seasoning until lightly browned add onion and cook til softened. Add enchilada sauce and green chile and continue to cook for about five minutes, remove from heat. Serve on taco shell of choice; Fat Head tortillas, cheese shells, or lettuce leaves. Top with favorite toppings. 
This meat would also work well served over cauliflower rice
