Corned Beef Hash

Quick and clean eating at its best! 


Corned Beef Hash  


1 pound cooked corned beef  

1/2 cup onion finely diced  

1/2 cup red pepper finely diced  

1/2 cup zucchini diced small  

1 bag cooked cauliflower rice  

1/2 cup chicken broth (I use LonoLife)

1 egg

1 tablespoon butter  

salt and pepper to taste  

2-3 tablespoons avocado oil  





Over medium high heat in heavy skillet add avocado oil and vegetables, add salt and pepper, sauté until softened add cauliflower rice and continue to cook a couple of minutes to combine flavors. Add chopped corned beef and chicken broth, stir and cook until veggies are tender. Remove from heat. In sauté pan over medium low heat add butter and fry egg to desired taste. Plate Corned Beef and top with egg. 

Makes 2-3 servings
