On the table in less than thirty minutes!!
1 pound boneless chicken thighs cut into bite size pieces
1/2 a medium onion diced large
2 large cloves garlic minced
3-4 tablespoons bacon fat
2 cups chicken broth (I used LonoLife Keto Chicken Bone Broth)
2 tablespoons lemon juice
1 tablespoon lemon zest (optional but delicious!)
8 ounces full fat cream cheese
8 ounces baby spinach (fresh)
salt and pepper to taste
Grated hard cheese
Red pepper flakes
If you want to get really creative toss some sliced mushrooms in the mix!!
In large skillet over medium heat add bacon fat, chicken, some salt, and onions. When onions are translucent add garlic and sauté until all liquid has cooked off and meat begins to lightly browned. Remove from pan and set aside. To the same skillet add broth and bring to simmer add cream cheese and stir until melted, add lemon juice, stirring together. Add spinach and cook until spinach is wilted add chicken back into the pan and stir to combine. Serve over cauliflower rice, zoodles, or cauliflower mash.
