Keto Waffles

Keto waffles that are the real deal!

Keto Waffles

Ingredients 

1/2  cup lupin flour (I use Miracle Flour)

1/4  cup oat fiber

1/4 C egg white protein

1 1/2 teaspoon baking power

3 tablespoons allulose

1/8  teaspoon salt

1/2 teaspoon chicory root

2 eggs whisked

 2 tablespoons butter melted 

1 teaspoon vanilla

 1/4 cup heavy cream

 3/4 cup almond milk

Directions 

Sift dry ingredients together in medium size bowl.

 In separate bowl mix wet ingredients together, add to dry ingredients. 

Let sit for one minute to allow baking powder to activate.

Add batter to waffle maker and cook according to waffle maker instructions.

Top with favorite toppings!

Pumpkin Cream Cheese Spread

6 ounces cream cheese softened

1/3 cup pumpkin purée

2 tablespoons butter softened

1 teaspoon pumpkin spice

1/2 cup powdered erythritol sifted

Mix cream cheese, butter, pumpkin purée, until well combined. Add powdered erythritol and mix til creamy and smooth.

Options:

Pumpkin Spice Waffles: Add 1 tablespoon pumpkin spice to the dry ingredients.

Switch vanilla out for flavor of choice.

Opt for savory herbs and seasonings.

Use waffles for Sandwiches!!

  1. Sunday breakfast for sure!! I will have to use unflavored protein powder instead of egg white powder, or maybe whipped egg whites!!

  2. Boy, this made a mess! I bought the same waffle maker that you suggested, Nancy. And the recipe said it makes 1 serving, so I dumped it all in the waffle maker. Overflowing! I’m thinking it would’ve mad 2 of these large waffles (each large waffle has 4 small squares within).

  3. Actually your recipe doesnt say how many waffles it makes. I copied the recipe into a recipe app I use, and it must’ve assumed one waffle since it wasn’t stated anywhere in the recipe. Could you add the quantity or number of servings? And what constitutes a serving, pretty please? It tastes great!

  4. Thank you so much for making recipes using lupin flour! I recently discovered this flour as I am allergic to almond flour and don’t always care for the taste of coconut flour. I was having difficulty finding recipes using the lupin flour so your site was a blessing to find🤗
