The best keto tamales ever!

Makes 1/2 dozen tamales 

Prep: soak corn husks in water minimum 2 hours up to overnight.

Ingredients for Masa

1/2 cup lupin flour (Miracle Flour)

1/4 cup almond flour 

1/2 tablespoon light chile powder 

1/4 teaspoon corn extract 

1/2 teaspoon salt 

1/4 cup bacon fat

1 egg 

1/8 cup water 

Directions 

Mix all ingredients together until combined. If masa (dough) seems to stiff add an extra tablespoon of water.

Divide masa into six even portions. Remove one corn husk at a time from water, lightly tap off excess. Press masa into corn husk starting at the large end working your way towards narrow end, about 2/3 up. Pat it out as evenly as possible. Add two-three tablespoons your favorite filling in center of filling (my favorite is pork and red chile). Fold over and roll shut. Fold end pieces up to secure it. 

Stack tamales standing up in steamer and steam 7-10 minutes. Unwrap and serve!

Filling Ideas: use red or green chile with a protein of your choosing.
