Enchilada Soup

Enchilada Soup 

1/2 c lard or bacon fat 

1/2 cup diced onion 

1/2 cup lupin flour by Wholesome Provision

1/4 cup almond flour 

1/3 cup fancy chili powder by Fiesta

2 quarts chicken broth 

1/2 teaspoon sweet corn extract  by Amoretti

4 cups cooked chicken 

3 cups shredded cheddar cheese 

2-3 teaspoons konjac root or thickener of choice.

1 teaspoon garlic powder 

Salt and pepper to taste 

1/2 tablespoon chopped cilantro 

Toppings:

Keto Stix

Shredded cheese 

Sour cream 

Cilantro 

Green onion 

Avocado 

Lime 

Directions 

In heavy 6 quart pot heat fat, add diced onion and salt. Sauté onion until translucent and soft.

Add lupin flour, almond flour, and chili powder. Stir and cook for about one minute to create roux.

Add chicken broth and stir.

Add chicken, salt , pepper, garlic powder, corn extract, and konjac root. Stir until slightly thickened.

Do not boil soup, as soup simmers, add one cup of cheese at a time and stir until melted before adding next cup. 

At this point the enchilada soup should have a creamy thick consistency, add cilantro to finish and remove from heat. 

Slow Cooker Directions

Sauté onion in fat until soft.
Add lupin flour, almond flour, and chili powder. Stir and cook for about one minute to create roux.

Place in slow cooker.
Add chicken broth and stir.

Add chicken, salt , pepper, garlic powder, corn extract, and konjac root.

Cook on low heat until thickened, add cheese and stir until smooth. Add cilantro and serve.

Do not boil soup, as soup simmers, add one cup of cheese at a time and stir until melted before adding next cup.

Serve and top with your choice of toppings. 

This soup is delicious with a garden salad and Miracle Tortillas.
