Whether you want meatballs or Meatloaf, this recipe is as easy as it gets! Just double the recipe for family size meatloaf.
1 pound ground protein (beef, chicken, turkey, pork, lamb)
note* if using chicken or turkey add 2 tablespoons of fat to mixture.
1/2 cup ground pork skins
2 tablespoons dehydrated minced onion
2 teaspoons garlic powder
salt and pepper to taste (when using salty cheese go lightly with the salt)
1/2 cup sugar free ketchup
2 tablespoons beef broth powder
1 tablespoon sugar free bbq sauce.
2 slices cooked thick sliced bacon crumbled
1/2 cup feta cheese crumbles
1 cup chopped spinach
1-1 1/2 teaspoons Greek Seasoning
1/2 cup ground Parmesan cheese
3-4 finely chopped fresh basil or 1 teaspoon dried
1 teaspoon Italian seasoning
1/2 teaspoon dried chili pepper (optional)
1/2 cup queso fresco crumbles
1 tablespoon Mexican taco seasoning
1/4 cup finely chopped cilantro
The meatballs can be baked or pan fried. They can also be prepped and frozen fresh for later use.
Place meat, egg, ground pork skins, minced onion, salt, pepper, garlic powder, in large bowl. Add selected flavor ingredients, lightly mix until combined.
Preheat oven to 375 degrees. Line baking sheet with parchment paper.
With your hands or cookie scoop shape mixture into 1 1/2” balls, place on baking sheet leaving space in between.
Bake for about 30 minutes and remove.
Pan Frying Instructions
Place heavy skillet over medium heat and add 2-3 tablespoons of avocado oil in pan.
Add meatballs leaving space in between. Brown meatballs while turning for even color. Meatballs are done when firm and juices run clear.
