Potato soup is a family favorite in our house so I definitely had to come up with a keto version that would meet my nutritional needs but also satisfy my non keto family! Enter Fauxtato soup, so delicious my husband argued there had to be potatoes in it!
A few tips:
This is a fairly easy recipe, especially if you do a little food prep.
I find cooking my cauliflower before adding it to the broth eliminates the strong taste of cruciferous veggies. There is no need to add water when cooking in the microwave either, the water content in the cauliflower is more than enough to get the job done.
Trim stems from cauliflower and rough chop cauliflower.
Microwave cauliflower florets uncovered for 10-15 minutes or until fork tender.
2 large heads cauliflower, cooked
1/4 cup bacon fat
1 medium onion, diced
1- 1 1/2 quarts chicken or ham broth
1 cup heavy cream
1 tablespoon Konjac (glucomannan) root powder,
1/2 teaspoon garlic powder
1 tablespoon chives, dried
salt and pepper to taste.
Place heavy 5 quart pot over medium low heat.
Melt bacon fat and butter.
Add diced onions and sprinkle with a little salt. Sauté onions until translucent.
Add broth, stir.
Add cauliflower and blend with hand blender, be very careful as liquid is hot. If you do not have a immersion blender you can blend 3/4 of cauliflower in regular blender then stir into broth, roughly chop the remainder and add for texture.
Add heavy cream and Konjac root powder, garlic powder, salt and pepper. Stir until smooth and thickened.
Stir in chives last and serve.
