
Recipe 2 1/2- 3 pound pot roast 1 cup beef broth 1/2 teaspoon guar gum (more if you want thicker gravy) 2-3 tablespoons bacon fat and lard salt pepper garlic powder Prepare the roast, use paper towel to pat roast completely dry. Generously salt the roast on all sides. In large skilet Heat skillet over medium high heat, add fat and melt. When fat is hot add roast and brown unlit golden brown crust is formed on all sides. Remove from skillet and place in Instant Pot, add the beef broth and seasonings. Place lid on container and set manual timer to 50 minutes. When timer goes off, turn power off and flip the quick release lever and allow steam to escape. Remove lid carefully as not to burn yourself. Place roast on serving dish. Turn sauté button on, add guar gum and whisk until desired thickness, pour into bowl. Serve with your favorite sides and enjoy!
